October is the month of the squash. Millions of people rush to the nearest pumpkin farm to purchase pumpkins to make Jack-O-Lanterns and bake a delicious pumpkin pie. Did you know there are other types squashes that are available? You can definitely still buy your pumpkins, but here are four squashes that you can buy to make your October way better.
- Butternut Squash
It’s sweet and hearty, and great for soups, desserts, or simply roasting on its own. Biologically, it’s a fruit, and it’s rich in fiber, antioxidants, and phytonutrients. Peeling the skin and steaming the flesh is great for a satisfying October meal.
- Spaghetti Squash
Like the name suggests, it’s a squash whose flesh separates into spaghetti-like strands. If you’re up for it, it’s a great replacement for traditional pasta–when cooked–because you get vitamins A, C, and B6. It also has lutein and zeaxanthin, antioxidants believed to protect the eyes from age-related diseases.
- Acorn Squash
This squash is the easiest to prepare, it’s rich in flavor, and loaded with fiber, magnesium, potassium, AND B vitamins and vitamin C. Your waistline will appreciate this squash, too, as one cup only has 56 calories.
- Delicata Squash
Never heard of this squash before? You may have heard of it under its different names: peanut squash or Bohemian squash. Don’t worry, now you have. You’ll definitely want this squash on your fall grocery list. One serving will cost you only 40 calories and contain about 90 percent of your vitamin A needs.
