Chicken Corn Chowder Ole
2 lbs. Chicken Breasts
1 Onion (diced)
2 Garlic Cloves (minced)
1 ½ tsp. Ground Cumin
4 T. Olive Oil
3 c. Chicken Broth
1 qt. Light Half & Half
3 c. shredded Monterey Jack Cheese
2 c. Corn (frozen)
2 cans (4 oz) Diced Green Chiles
2 Tomato’s (diced)
Dash hot sauce
Optional Garnish: Cilantro, Diced Avocado or Sour Cream
Directions:
Heat Olive Oil in large Dutch oven or sauce pan and add diced Onion and Garlic Cloves. Cook about 1-2 minutes until translucent (being careful to not burn the Garlic). Once ready, add cubed Chicken and brown for 5 minutes. Add Chicken Broth and Cumin and cook an additional 5 minutes until Chicken is cooked through. Next, add the Half & Half, Cheese, Corn, Chilies and Hot Sauce. Cook over low heat until the Cheese is melted. To finish, stir in diced Tomatoes and garnish with Freshly Chopped Cilantro, Avocado or Sour Cream. This dish does well with Cornbread or Tortilla Chips!
