Crock Pot Corned Beef & Cabbage
Corned Beef and Cabbage is the traditional meal served in Irish homes on St. Patrick’s Day each year. The meal typically takes hours in the oven, but cooking it in a crock pot saves both time and stress for the busy household. With a few simple ingredients you can enjoy a typical Irish feast with your loved ones this Monday, March 17th.
Ingredients:
1, 4-5 pound Corned Beef Brisket with spice packet/marinade
4 large Carrots, peeled and chopped into large chunks
12 baby Red Potatoes, quartered
1 Yellow Onion, diced into small pieces
4 C. Water
6 oz. Beer (Irish of Course!)
½ head of Cabbage (chopped)
Directions: In the bottom of a Crock Pot place carrots, potatoes and onion on the bottom and pour in water. Place the Brisket on top of the vegetables and pour beer over the top along with the spices/marinade from the packet. Cover with lid and cook on high for 7-8 hours until the meat is tender. Be sure to add Cabbage 1 hour prior to serving.
